- 2 racks of pork ribs (St. Louis-style or baby back)
- 1/4 cup BBQ rub
- 1/4 cup brown sugar
- 2 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 cup BBQ sauce
- Wood chips (hickory, oak, or apple)
Instructions
- Preheat smoker/grill to 225°F (110°C).
- Prepare ribs (remove membrane, trim excess fat).
- Apply dry rub.
- Smoke ribs for 4-5 hours.
- Wrap ribs in foil (2-3 hours).
- Unwrap and glaze with BBQ sauce.
- Finish with 30 minutes of direct heat.
